I am just starting to fire my own kiln. I am using your firing schedule. Do I really have to wait 14 hours till the kiln shuts off or can I shut it off after the 7 schedule and let it cool on its own without opening it?

I doesn’t really matter whether you programm the kiln to shut off after 370C or not.  UNLESS your kiln loses heat faster than the rate suggested as the fastest the glass can be allowed to cool.  If your kiln cools more slowly, then you are not using any electricity anyway, so there is no problem.
